                        Budget Bites Shepherd’s Pie
            Ingredients for 8 Servings

    2 tbspOlive oil
- 
    1 cupWhite onion, chopped
- 
    1 cupCarrots, chopped
- 
    1 cupMushrooms
- 
    2 clovesGarlic, minced
- 
    1 lbGround beef
- 
    1/2 tspSalt

    1 TbsWorcestershire sauce
- 
    2 TbsAll-purpose flour
- 
    2 TbsTomato paste
- 
    1 cupBeef broth
- 
    1 cupFrozen peas

    1/3 cupWhole milk

Method
-             Spray a 9”x13” casserole pan with non-stick cooking spray.
-             Add the oil to a large skillet and place it over medium-high heat. Add the onions, carrots, mushrooms, and garlic and cook 5 minutes, stirring occasionally. Pour into the prepared casserole dish.
-             Add the ground beef to the skillet and brown for 6-8 minutes, stirring occasionally.
-             Add the Worcestershire sauce and tomato paste. Stir to combine and cook for 1 minute.
-             Add the flour and stir until well incorporated for two minutes.
-             Add the broth and frozen peas. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
-             Pour the meat mixture into the casserole dish with the vegetables and stir to combine. Preheat oven to 400 degrees F.
-             Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil and cook until potatoes are fork tender, 25-30 minutes.
-             Drain the potatoes in a colander. Place potatoes back into the hot pot and add butter, milk, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
-             Spread the mashed potatoes on top of the meat/vegetable mixture in the pan until fully covered. Place in the hot oven and bake for 35-40 minutes or until sides begin to bubble.
