                        Spicy Shrimp Chickpea Salad
            Ingredients for 2-3 people Servings

    1 1/2 cupShrimp, peeled and deveined
- 
    1 TbspLemon juice

    1 tspOlive oil
- 
    1/2 tspCumin
- 
    1/2 tspCoriander
- 
    1/2 tspDill, dry
- 
    1 tspChili powder
- 
    1 cupChickpeas, cooked
- 
    2 clovesGarlic, minced
- 
    2Cucumbers, chopped
- 
    1Tomato, thinly chopped
- 
    1 smallPepper
- 
    1Scallion, chopped
- 
    1/3 cupHerbs, chopped (basil, arugula, and parsley)
- 
    1 TbspOlives, pitted

    1 TspOlive oil

    1 TbspLemon juice

Method
-             Combine shrimp, lemon juice, olive oil, cumin, coriander, dill, and chili powder in a medium bowl. Cover and refrigerate for 15-20 minutes.
-             In a large saucepan on medium heat, add the shrimp and saute for 10-15 minutes, or until the shrimp starts to brown.
-             Drain the canned chickpeas and garlic and add to the saucepan. Cook for another 15 minutes.
-             Build the salad with cucumbers, tomatoes, pepper, scallion, greens, and olives. Add in shrimp and chickpeas.
-             Dress with olive oil, lemon juice, salt and pepper.
